Are seed oils bad for you? The honest answer

Short answer: yes, industrial seed oils are a fat worth avoiding as your default cooking oil. Not because fat is bad, but because these specific oils are high in fragile omega-6 linoleic acid, they oxidize easily, and they have quietly replaced the stable animal fats humans ate for thousands of years. The problem is the oil, not the act of eating fat.

What seed oils actually are

“Seed oils” and “vegetable oils” mostly mean a handful of industrial oils: soybean, canola (rapeseed), sunflower, corn, cottonseed, safflower and grapeseed. They sound like garden produce, but you cannot squeeze oil out of a sunflower seed the way you press an olive or an avocado.

Getting oil out of these seeds takes an industrial process:

  • The seeds are crushed and usually treated with a solvent (hexane) to extract the maximum amount of oil.
  • The crude oil is then refined, bleached and deodorized to strip the smell and color that the raw extract would otherwise have.

By the time it reaches the bottle, it is a heavily processed product. That matters, because the same refining that makes the oil neutral and cheap also makes it a long way from anything your ancestors ate. Olive oil and butter you could make in a kitchen. These oils you cannot.

The real problem: omega-6 and oxidation

The honest case against seed oils is not a mystery ingredient. It is two things working together.

They are loaded with omega-6 linoleic acid. Your body needs some omega-6, but it also needs omega-3, and the two are meant to be roughly in balance. A diet built on seed oils tilts that balance heavily toward omega-6. When the ratio is skewed for years, the body sits in a state of low-grade inflammation, the kind that does not hurt but quietly affects how you feel, recover and age.

Those fats are chemically fragile. Linoleic acid is a polyunsaturated fat, which means it has weak points that react with heat, light and oxygen. That reaction is oxidation, and it produces unstable byproducts your body did not evolve to handle in bulk. Frying is the worst case: you take an already fragile oil and hold it hot for a long time, exactly the conditions that break it down. Saturated animal fats like butter and tallow are far more stable under heat.

So the issue is not “fat makes you fat.” It is that you are eating large amounts of a fragile, inflammatory fat, often heated, in place of stable fats your body uses well.

Why they became impossible to avoid

Seed oils took over for reasons that have little to do with health. They are cheap to produce at scale, they have a long shelf life, and decades of dietary advice told people that animal fat was dangerous and “vegetable” oil was the heart-healthy choice. Food manufacturers were happy to oblige, because seed oils are a low-cost ingredient.

The result is that they are now in almost everything: salad dressings, sauces, packaged snacks, fried fast food, “healthy” plant spreads, even foods marketed as clean. This is the same pattern as the rest of ultra-processed food: the cheap, industrial version became the default, and the real food got reframed as the indulgence.

Here is how upside-down it has become: people fry their eggs in sunflower oil and then worry that butter is too fatty. Butter is real food humans have eaten for thousands of years. The seed oil is the new, industrial part.

What to use instead

You do not need a special product. You need stable, whole-food fats as your default:

  • Tallow and other animal fats for high-heat cooking, since they hold up far better than fragile seed oils.
  • Extra virgin olive oil for dressings, finishing and lower-heat cooking.
  • Coconut oil when you want a stable plant fat.

The simple rule: if a fat could be made in a kitchen from a recognizable food, it is probably a good default. If it needs a refinery, a solvent and a deodorizing step, it is the part to cut.
